Job Overview:
As an Assistant Head Baker, you will play a key role in supporting the Head Baker in managing day-to-day operations within the central kitchen. Your responsibilities will include overseeing the production of high-quality baked goods, ensuring the proper functioning of bakery equipment, maintaining cleanliness and food safety standards, and training junior staff. You will also contribute to menu development and help maintain inventory levels to ensure smooth kitchen operations.
Job Responsibilities:
- Assist the Head Baker in overseeing the daily production of bread, pastries, cakes, cookies, and other baked goods.
- Ensure all baked products are made according to the company’s recipes and standards.
- Assist in the development of new recipes, ensuring innovation and quality consistency.
- Monitor and adjust baking schedules to meet production demands and deadlines.
- Supervise and guide junior bakers and kitchen staff in their tasks, ensuring proper techniques and safety practices are followed.
- Train new staff members on baking processes, equipment usage, and hygiene protocols.
- Ensure proper delegation of tasks to ensure maximum efficiency and high-quality output.
- Ensure the highest quality of baked goods, from ingredients to finished products, including taste, texture, and appearance.
- Perform quality checks and maintain consistency across production batches.
- Handle troubleshooting of production issues and implement corrective actions as needed.
- Assist in managing ingredient and supply inventories, ensuring stock levels are maintained to prevent shortages or wastage.
- Coordinate with suppliers and assist in the ordering of ingredients and materials
- Ensure that all equipment is well-maintained, cleaned, and functioning properly.
- Ensure compliance with food safety and hygiene standards, including proper handling, storage, and sanitation of ingredients and equipment.
- Assist with the maintenance of the kitchen’s cleanliness and organization.
- Work closely with other departments (e.g., front-of-house, delivery, packaging) to ensure smooth operations and product delivery.
- Support the Head Baker in implementing any changes or improvements in bakery processes.
Qualifications:
- Minimum 3-5 years of experience in a professional bakery or culinary setting, with at least 1-2 years in a supervisory or leadership role.
- Experience in large-scale or central kitchen operations is a plus.
- In-depth knowledge of baking techniques, including pastry, bread, cakes, and other baked goods.
- Strong leadership, communication, and organizational skills.
- Ability to handle multiple tasks and work in a fast-paced environment.
- Strong understanding of food safety standards and HACCP regulations.
- Culinary or baking certification or diploma is preferred, but not required if experience is extensive.
